Chocolate Puff Pastry Bites

Puff pastry has to be one of the seven wonders of the culinary world. For me at least, it’s right up there with caramelizing sugar and emulsions. I know how it works, I understand the science, but doggonit if it doesn’t make my head shake when I watch the magic happen.

In a nutshell, puff pastry is made by folding the buttery dough over and over and over onto itself so when its baked, it expands like a blowfish on steroids. Traditionally, it was time-consuming to make, but now we have all these shortcuts and even frozen versions, which I hate to admit, I LOVE to use.  When unexpected company drops by to say hello, one can take a thawed sheet of puff pastry, shove in some chocolate chips, cover with coconut flakes and bake it all in the oven for quick sweet appetizer or mini dessert.

These little puffs start out looking like ravioli, but they rise (and rise) to yield little flaky cubes with melty chocolate centers. By all means, experiment – I imagine adding a little strawberry jam or orange marmalade to the mix wouldn’t hurt. Using your own puff pastry instead of buying it frozen would up the awesomness of the dish, but there’s nothing wrong with the pre-made frozen kind, especially if you’re pressed for time.

CREAMY GARLIC SPINACH SOUP


As the weather is getting colder these days something warm to enjoy will be just what you're looking for. I love hot chocolate most the time but this delicious soup will be will too =) 

Ingredients 

1/2 lb fresh spinach
2 large heads of garlic, minced
2 large onions, diced
4 medium potatoes, diced
3 cups chicken stock
2 cups heavy cream
2 large egg yolks
8 tbsp butter

Mocha Frappuccino

Chocolate Caramel Latte


This homemade latte will sure save you money in the long run and it is a great treat for after dinner. Instant espresso saves you a step.

Servings: 1


Ingredients

¼ cup Hot Espresso, dissolve instant espresso granules in hot milk
½ cup Steamed Skim Milk
¼ cup Caramel Sundae Topping, at room temperature

Foamed Milk, whipped cream or whipped topping

Garnish: Shaved Chocolate or Chocolate Covered Candy Coffee Beans

Directions

Stir together hot espresso, steamed milk and caramel topping in a large mug or cup. Top with foamed milk, whipped cream or whipped topping. Garnish with shaved chocolate or chocolate covered candy coffee beans, if desired. Serve immediately.

Fresh Fruit Salad


With summer's heat, one can really enjoy a sweet cool recipe like this. 


This fruit salad combines chopped peaches, strawberries, bananas, and red and green grapes, dressed with a simple fresh lime and pineapple juice dressing.

Ingredients

  • 6 peaches, peeled, pitted, and chopped
  • 1 pound strawberries, rinsed, hulled, and sliced
  • 1/2 pound seedless green grapes
  • 1/2 pound seedless red grapes
  • 3 bananas, peeled and sliced
  • 1/2 cup granulated sugar, or less, to taste
Dressing:
  • Juice of one lime
  • 1/2 cup pineapple juice
  • 1 teaspoon ground ginger

Iced Coffee

Coffee happens to be my favorite hot drink. I love drinking it during cold nights. Since you are in summer I can't enjoy it that much, only the heat that is. I googled a little about how I can still enjoy it in this heat and came across this cool recipe =)

Coffee doesn't have to be served as a hot drink all the time. This iced coffee recipe will cool you down on a warm day. This is a quick and easy iced coffee recipe using instant coffee. I make this often after I come home from a long day at work or at school to give me that little boost until it's time to go to bed. 

The proportions I proposed makes an average strength coffee drink. Feel free to change them to fit your desires. Please do not to make this drink too strong (too much coffee/sugar) or your heart will start racing. It's happened to me once or twice and it's not a nice feeling. 

Sometimes people will spice their iced coffees. I've listed some ideas for you to try if you wish. Start with 1/4 teaspoon and add more if you want it to smell stronger. A combination of spices/flavors could be interesting! ;)

Chocolate Banana Milkshake

As the weather got hotter these days, it's always nice to cool it with something sweet. I had a wonder milkshake at somebody's house last week and loved it so much. Did a little search on it to share it in my blog and came up with this super easy recipe to make. It's so simple that you can even make it before going to school, collage or work. Won't take more than 10 min.

This milkshake recipe is perfect for hot summer days and it's truly easy to prepare! 
What I also love about it is you only need 3 ingredients!

 
 Here I show you how to make a chocolate banana milkshake.

So I've used banana in this example, but you can use pretty much any fruit you like. Here are some ideas: raspberry, blueberry, strawberry, peach, orange. You can really diversify this recipe by choosing your type of ice cream. The two guaranteed popular choices are vanilla ice cream and chocolate ice cream. I decided to use chocolate ice cream, mmmm chocolate! Go wild and experiment with other kinds of ice cream with your fruit choice! I chose to use 2% lactose free homogenized milk (I am lactose intolerant). Another idea is to use soy milk. I've tasted a soy milk banana milkshake once and the taste was very interesting! 

Total time: 10 min
Ingredients (2 servings):
2 bananas
2 cups of milk (or soy milk)
2 to 4 tablespoons of ice cream

Yummy Chocolate Cupcakes

I love them anyhow and anyway. Hot, cold, baked, hard, soft, with milk, with cookies or just a bar of it! It's a delicious and yummy sweet. I said chocolate baking, cake, cupcake or any other way with chocolate. Today's recipe is a light snack with a bit of chocolate of course =)

 Ingredients

 For the chocolate cupcakes:
  • 100g plain flower
  • 20g cocoa powder
  • 140g caster sugar
  • 1.5tsp baking powder
  • Pinch of salt
  • 40g unsalted butter at room temperature
  • 120ml whole milk
  • 1 egg
  • ¼tsp of vanilla extract
For the chocolate buttercream frosting:
  • 600g icing sugar sifted
  • 200g unsalted butter
  • 80g cocoa powder
  • 80ml whole milk

One of my all time favorite sweets. It's easy to make, the ingredients are so simple and always available in the kitchen and of course not to mention it's super tasty.

Makes 6 3-inch (4 oz) ramekins

[Caramel sauce]
200 g white sugar

[Custard]
4 large eggs (200 g)
100 g white sugar (about ½ cup)
½  tsp vanilla extract
500 ml whole milk
