Summer Cheese Cake

Now that the winter is almost gone the spring is a head, it's nice idea to start baking a new sweet dish. Surely a little something new is always welcomed and never fails to surprise you. A deliciously yummy while and cold cake of cheese made from Kiri cheese with fresh fruit to add more health points. Though it's perfect for summer still it's good for any other season.

Preparation Time: 10 mins 
Okay guys! Let's make some goodies!
  •     2½ tbsp melted butter
  •     5 biscuits (crushed)
  •     12 Kiri squares
  •     ¼ cup milk
  •     ¼ cup white sugar
  •     1 gelatine sheet
  •     ½ cup whipping cream
  •     ¼ tsp lemon and orange zest
  •     A selection of your favorite summer fruits for decoration

Mix the crushed biscuits and melted butter. Press the mixture firmly and evenly into the base of a ring and chill for ten minutes.

Mix the Kiri squares with sugar, adding milk, lemon and orange zest to it. Then melt the gelatine sheet and combine with the Kiri mixture. Finally add the whipping cream.

Pour the mixture on top of the biscuit base and chill for two hours until set. Before serving, decorate the cake with summer fruits of your choice.
